Luxury Ski Chalet Jobs
Ski Chalet Chef
Summary
We are looking to recruit an enthusiastic chef for Winter 2023/24 to join a team of four chalet staff in our luxurious chalet in Châtel, Portes du Soleil in the French Alps. Guests, typically numbering 8-14 each week, will enjoy restaurant quality meals prepared by the chef in a relaxed environment, complimented by a wide selection of wines (a key feature of our offering). The successful chef will form part of a happy, motivated and independent team, enjoying leading benefits and with plenty of time to ski.
Job Details
The chef is in charge of designing enticing menus for our guests, reacting to their specific requirements, and delivering cuisine to match the luxurious setting we provide. The chef also has a key role in wine pairing. The chef manages provisioning each week and throughout the season and must be able to work to the allocated budget. Food delivery can be arranged with Promocash and Sysco and there is access to a staff vehicle to assist with additional shopping. The chef also prepares meals for staff while on duty.
We serve a hot & continental breakfast every day with afternoon tea and cakes being freshly prepared each morning for the guests to return to later on. On some mornings breakfast will be covered by the other staff providing some additional time off for the chef.
In the middle of the day, there is usually time to relax and enjoy the incredible skiing across the Portes du Soleil.
The chef prepares and serves dinners on five evenings each week with a raclette feast on the sixth night being presented by another member of staff as long as appropriate standards are maintained by the chef. Depending on the guests there may be an early children's meal to be served. Canapés are served for the for adults along with a sparkling Crémant, followed by a three-course evening meal which culminates with a generous cheese board. Wines are paired with each course nightly from our large cellar.
The highest standards of hygiene will be maintained at all times and the chef must ensure a full clean of the kitchen on changeover days.
You will work with a team of staff to ensure our chalet guests are looked after to a high standard. We have a very good reputation amongst clients for the quality of our food & wine, service, facilities and the approachability of our staff, all of which are essential to maintain.
All staff are expected to work together to deliver a fabulous holiday experience for guests. While the chef’s focus will be on the kitchen, the role includes assisting with other tasks, and supporting the other staff as necessary, to ensure high levels of guest satisfaction.
The Package
We expect the winter season to be a fun experience. There will be plenty of opportunity to enjoy the mountain environment and the many winter sports on offer. Châtel has a friendly atmosphere and there are many seasonaires keen to strike up new friendships. You will not find it hard to find new skiing partners.
We also expect our staff to benefit from the same calm and relaxing atmosphere that we aim to provide for our guests. With a team of four there is plenty of support available while working in and around the chalet.
We provide pre-season training for the whole team to learn about the chalet, the roles, to meet each other, and develop a good working relationship.
There will be a minimum of one full day and two half days off with plenty of additional time for skiing during the day.
